Tofu skewers
Today I present a summery and easy-to-prepare recipe: vegetarian tofu kebabs. These skewers in particular have the tofu as the main character, combined with peppers, courgettes and aubergines.
Although they are a perfect vegan option for the grill during the summer, I assure you that you will also enjoy them during the colder months. How to season tofu
Tofu is one of those foods that often intimidate most people. I myself was very sceptical, but with time I realised that it is all in knowing how to cook it correctly. Ever since I learnt and understood how to enhance tofu, I am its biggest fan! I really like it in an exaggerated way. Also try this crispy baked tofu.
Will you have to press the tofu for these tofu skewers?
Tofu contains a lot of water. This water is generally removed by wrapping the block of tofu in a clean kitchen cloth and placing a weight on it to apply pressure. The more water you can remove from the tofu, the more the tofu will be able to absorb the flavours of the marinade.
After several lunches in a hurry, I realised that actually with solid tofu in a block it is not necessarily necessary. Clearly you have to drain the tofu and remove the water from the packet, after which you can simply press the tofu with a clean kitchen cloth for a few seconds.
It is therefore essential to use a good marinade to give taste to our tofu.
Here are all the ingredients you'll need:

- 300 g firm tofu
- 1 red pepper
- 1 courgette
- 1 aubergine
These are the ingredients I used for my marinade. The longer the marinade, the tastier the tofu will be:
- 1 Tbsp Jamaican jerk (if you can't find it use soy sauce)
- 1 Tbsp olive oil
- 1 tsp tomato paste
- Salt & pepper to taste
- 1 tsp garlic powder
Of course, we don't always have time to marinate tofu for hours. So don't worry about that. even 15 minutes is enough in most cases!

Tofu skewers
Equipment
- 6 skewer sticks
Ingredients
- 300 g Firm tofu
- 1 red bell pepper
- 1 zucchini
- 1 eggplant
For marinating
- 1 Tbsp jamaican jerk
- 1 Tbsp Olive oil
- 2-3 tsp soy sauce
- 1 tsp tomato paste
- as needed salt & pepper
- 1 tsp garlic powder
Instructions
- Press the tofu with a clean kitchen towel to remove the water inside. The more water you can remove, the more the tofu can absorb the flavors of the marinade.
- Cut the tofu into cubes of approx. 1x1 inches (approx. 24 pieces)
- Prepare the marinade in a bowl by mixing all the "marinade ingredients." Help yourself with a kitchen whisk.
- Place the tofu cubes in the marinade and let them absorb for at least 10 to 15 minutes.
- Turn the oven on to 375°F above and below
- Meanwhile, cut the vegetables into large cubes. Keep in mind that they will shrink during cooking.
- Make up your skewers by alternating vegetables and tofu. Brush the marinade remaining in the tofu bowl over the vegetables.
- Bake for 20-25 minutes or until the vegetables and tofu are well cooked.
- Your skewers are ready to be enjoyed!
