Wild garlic butter: only 3 ingredients and vegan
Butter is an ingredient that is used in cooking in many different ways. For the past few years it has also been finding good alternatives to animal butter on the market that are 100% plant-based. Even in this recipe for a delicious wild garlic butter, I used a vegan butter and the result is almost the same. If you are a lover of flavored butter, also try this one herb-flavored butter. Here are all the ingredients you'll need
- 2 handfuls of wild garlic: Ramsons (wild garlic) is the star of this flavored vegan butter. So make sure you have two good handfuls (see the amount also in the photo below) and that it is still fresh.
- 250g vegetable butter: you can use any kind of butter to make this recipe. If you want your butter to be vegan and suitable for people who are lactose intolerant make sure you use a vegetable butter.
- 1/2 teaspoon coarse salt (or 1 teaspoon fine salt) : you can choose based on what you have in the house and your personal preference whether to use coarse salt or fine salt. I find that doing a mix between the two gives a better result. If you only have fine salt on hand, don't worry, you will still get a great wild garlic butter!
- 1/2 teaspoon fine salt: In the point above I explain why I make a mix of fine and coarse salt.
Preparation (step-by-step)
1. Wash the wild garlic under running water and be sure to remove any insects and/or soil. You may use the salad washer for this step.
2. Cut your wild garlic into coarse strips.
3. Place all ingredients inside the blender and blend for a few minutes until airy, smooth and slightly green.

How to roll flavored butter for refrigerated storage
4. Take an approx. 30x20cm piece of baking paper and place the butter on the longest side that is closest to you when you are facing the rectangle of baking paper.
5. Roll the baking paper around the butter and try to give it a sausage shape.
6.Now take the sides and twirl the two ends in opposite directions to give the sausage a more regular shape.
7. Then let the butter rest in the refrigerator for at least 2 hours and enjoy it on croutons, in pasta or on bread.
Storage tips
You can store your homemade bear garlic flavored butter in the refrigerator or freezer. Below I explain how to do this.
- Refrigerated: to store your herb butter in the refrigerator, simply place it inside a butter container or store it inside a tupperware-type refrigerator container.
- Freezer: to freeze the butter leave it inside the baking paper and store in the freezer for up to 5 months. Thaw the butter by placing it inside the refrigerator for a few hours or for faster thawing leave it out of the refrigerator.
