As you can see, the ingredients for the filling of these rolls are also very simple. Of course you can use any vegetable for your filling. I recommend, however, that you keep the tofu. I am sure you will love these rolls!

La yufka è la pasta fillo turca. It is a very fine and thin dough that has a whitish color. It is used to prepare the Börek or my Baklava. However, you can also use it to make savory pies. In this case you will simply use several layers of yufka dough for the base.
You can find this paste in any Turkish or Middle Eastern store. In most cases you will also be able to choose from several brands.
How to roll yufka dough rolls
As you can see from the photos below, my yufka dough already had a "triangular" shape. However, should you find a yufka dough of a different size, you can simply cut it into triangles.

Yufka rolls
Ingredients
- 7 yufka dough triangles
- 5 handfuls fresh spinach
- 1 large white onion roughly diced
- 150 g tofu
- 1/2 zucchini roughly cut
- 1 clove garlic
- 1 tsp turmeric powder
- 1 tsp cumin powder
- as needed salt & pepper
- as needed sesame seeds
- 2 Tbsp seeds oil
Instructions
- Turn on a frying pan and sauté the onion and garlic for a few minutes.
- Add the tofu and zucchini and sauté until the zucchini and onions are wilted.
- Add the spices and salt and mix with a ladle.
- Add spinach and continue cooking until spinach is cooked.
- Let the filling for your rolls cool. It will not have to be cold but at least room temperature.
- Turn on the oven to 400°F on fan.
- Form your rolls following the steps described in the post. Remember to use seed oil to seal the rolls well and sprinkle them with sesame seeds.
- Let your rolls bake for 20-25 minutes or until they are nicely browned on the outside.
