Vegan tofu and chickpea meatballs

Today I propose meatballs with tofu and vegan chickpeas, courgettes and carrots. It is a recipe that came about a bit by chance with the ingredients I had in the fridge. They are easy to make and also perfect as an aperitif or vegan finger food. Vegan and gluten free: these chickpea and tofu meatballs are vegan and also gluten-free. To make them gluten free, I used chickpea flour to bind them. They are therefore suitable for almost everyone!

Cook them any way you like: you can opt for either cooking in a frying pan (as in this recipe) or baking in the oven. If you choose baking in the oven, bake for 35 minutes at 200°C on a fan function or until your meatballs are golden brown.

These chickpea and tofu meatballs are very simple and contain very common ingredients that we often already have in our kitchen. Below you can see the main ingredients you will need for these tasty vegan meatballs:

  • 100g smoked tofu
  • 200g cooked chickpeas
  • 1 Tbsp chickpea flour
  • 2 grated carrots
  • 1 grated zucchini
  • 1 medium onion roughly chopped
  • Salt & pepper to taste
  • Olive oil to taste

Instructions (step by step)

1. After grating zucchini and carrots, squeeze them between two hands to remove the water.

2. Place all ingredients in a blender and mix until smooth and compact

3. If your dough is too runny, add a little chickpea flour.

4. Form your balls with your hands.

5. Cook the meatballs in a nonstick skillet with a little oil. Turn the meatballs every 5 minutes or so.

6. Cook the balls until they are nicely browned on both sides.
