Vegan plum cake
this vegan plum and berry cake with dark butter I fell in love with. For this eggless cake you will need a few simple, easily available ingredients. This is one of my favourite cakes just like my vegan berry cake, or this vegan blueberry cake or my fluffy vegan banana bread.
Here are the ingredients you will need for your plum cobbler
These are the few simple ingredients you will need to make your delicious vegan plum cake without eggs and milk.
- Vegan butter
- All-purpose flour
- Baking powder
- Vegetable milk (I used apricot kernel milk from the brand Wunderkern)
- Plums
- brown sugar
- Cinnamon powder
- Nutmeg powder
- Almond granules (optional)
- Raspberries (optional)
- Frozen or fresh currants (optional)
What is brown butter and how to prepare it
Perhaps you have already heard of 'brown butter'. It is not a different butter from the classic one, it is simply butter that is altered in consistency and colour through long pan-frying. In practice, then, it is just a matter of melting the butter in a pan at a medium temperature while stirring constantly. This is done for at least 5-10 minutes, allowing the butter to bubble.
When it comes to vegan butter, you don't get a particularly dark butter but the final taste is still very satisfying.
TIP: Don't lose sight of your butter as you melt it. You will need to stay close to the stove and stir frequently.
The steps you will need to perform to make your plum cake
The steps to make your homemade plum cake are very simple, read the next few lines to find out more:
1. Wash, cut the fruit and add cinnamon and nutmeg.
Wash all the fruit you will use for your plum cake. I used fresh raspberries and frozen currants in addition to the plums. You can use any fruit!
Cut the plums in half and then into wedges after removing the stone. Put all the fruit in a bowl and add the cinnamon and nutmeg. Squeeze the fruit with your hands lightly to give a little less "texture" to your fruit and to spread the cinnamon well.
2. Prepare the dough for the plum cobbler.
Mix all the ingredients for the cake mix: flour, baking powder, sugar and milk. Make sure it is well mixed and free of lumps.
3. Brown the butter
As explained above, our vegan butter will need to be darkened. You will then need to melt it in a frying pan at medium temperature while stirring constantly. Do this for at least 5-10 minutes, letting the butter also bubble. Then add it to the baking pan (26x20cm) with high sides where you will make your cake.
4. Pour the dough and add the fruit to the pan with butter.
With the help of a spoon pour the dough inside the pan with butter. There will be plenty of butter so the dough will be overwhelmed with butter; it's only fair! Then add your fruit already sprinkled with cinnamon on top. Finish with a sprinkling of almond granules.
Bake at 200°C for 40-50min or until your cake is nice and golden (also do the tease test).

Ingredients
For the cake toppings
- 7-8 plums
- 1 handful raspberries (optional)
- 1 handful frozen currants (optional)
- 1/3 tsp nutmeg powder
- 1/2 Tbsp cinnamon powder
- 1 handful Almond granules
For the cake dough
- 180 g all purpose flour
- 300 ml plant milk I used the one from Wunderkern
- 1.5 tsp Baking powder
- 50 g brown sugar
For the brown butter
- 100 g vegan butter
Instructions
- Cut the plums in half and then into wedges after removing the stone.
- Put all the fruit in a bowl and add the cinnamon and nutmeg. Squeeze the fruit with your hands lightly to give a little less "texture" to your fruit and to spread the cinnamon well
For the cake dough
- Mix all the ingredients for the cake batter until it is free of lumps.
To brown the butter
- Melt the butter in a frying pan over medium temperature, stirring constantly. Do this for at least 5 to 10 minutes, letting the butter also bubble
To compose the cake
- Pour the butter into the baking dish (26x20cm) with high sides where you will make your cake.
- With the help of a spoon, pour the dough inside the pan with butter.
- Then add your fruit already sprinkled with cinnamon on top.
- Finish with a sprinkling of almond granules.
- Bake at 200°C for 40-50min or until your cake is nice and golden brown
Notes
- This cake is also delicious served still warm/tight with vanilla ice cream.
