Quick and easy strawberry galette
With the arrival of spring also comes lots of fruits that I love and can't wait to cook. Today I'll show you how to make a sweet strawberry galette quickly and easily. This is a vegan dessert made with strawberries that lets you savor the taste of the spring. Here are all the ingredients you'll need
- 500 g strawberries
- 2 teaspoons sugar
- 1 juice of one lemon
- 1 Shortcrust pastry-I used store-bought shortcrust pastry, which is generally easy to find in vegan versions in any supermarket.
- 1 Tablespoon of oat milk--Oat milk replaces the yellow egg that is normally brushed on the edges of the galettes to create that golden, shiny effect.
Preparation (step-by-step)
1. Wash the strawberries and cut them into round slices as you see in the picture, put them in a bowl and add the juice of one lemon.
2. Add the sugar and mix well. Let the strawberries rest in the refrigerator for at least 15 minutes.
3. Turn on the oven to 190°C in static mode.
4. Place pastry dough with baking paper in a round baking dish. Add the strawberries. Try NOT to put all the remaining liquid in the bottom of the bowl.
5. Fold the outer perimeter of the pastry toward the inside of the galette, trying to give it a nice shape.
6. Brush oat milk on the pastry frame. This will make the pastry more golden.
7. Add a sprinkle of sugar on the frame to give a nice glossy effect to your galette.
8. Bake for 40-45 minutes at 200°C or until the galette is golden brown.
Pro tip
- When you transfer the strawberries to the shortbread, be sure to remove as much liquid as possible so the galette does not become too wet.
- I used very little sugar for this cake but the amounts can be adjusted according to individual tastes.
- You can serve your Galette with vegan vanilla or hazelnut ice cream or custard.

- 1 paintbrush

- 1 Tbsp oat milk to be brushed on the edges
