Savory vegan waffles

Hi friend! here I am with a super quick and easy recipe for savory vegan waffles. You'll need very few ingredients that you probably already have at home.

I made my vegan savory waffles using a waffle iron, but if you don't have one you can safely use a simple nonstick skillet. Of course you will get a result that goes more in the direction of pancakes. Find more details about this at the end of the recipe.

These savory vegan waffles are a great alternative to classic sweet waffles. You can then make them for brunch, an appetizer with friends or as a simple snack (yes, even midnight!). There really are no limits, so get ready to make these waffles and make them your new "obsession."

Equipment

  • Waffle maker (optional)

Ingredients

  • 1 carrot
  • ½ zucchini
  • 100 g canned corn drained and rinsed
  • 2 handfuls fresh spinach leaves (optional)
  • ½ tsp Baking powder
  • 2 Tbsp white flour
  • 2 tsp Olive oil
  • 3-4 Tbsp water
  • as needed salt & pepper
  • as needed spices of your choice I use : paprika, garlic powder, herb powder.

Instructions

  • Peel the carrot and grate it with a grater.

  • Wash the zucchini and grate it as well.
    1/2 zucchini
  • Squeeze the carrots and zucchini over a sink with your hands to remove some of the liquid they contain. You can also help yourself with a kitchen cloth that you are willing to dirty : the carrots are likely to leave color and it will be difficult to remove.
  • Add all the ingredients in a bowl and mix by helping yourself with a spoon or ladle until you get a smooth batter.
    canned corn, fresh spinach, baking powder, all purpose flour, 2 teaspoons d'olive oil, water, salt and pepper to taste, q.b spices of your choice
  • Turn on your waffle maker and make sure it is lightly greased with some vegetable oil, vegan butter, or other.
  • Add the batter to the griddle and cook for 5 to 7 minutes or until the waffle is golden brown on both sides.

Notes

Tips: 
If you don't have a waffle maker, don't worry! This recipe can also be made with a simple frying pan. Follow the same steps and then form pancakes by helping yourself with a spoon and cook them in a nonstick pan with oil.
