Collard greens wraps
Hi foodie friend! So good to have you back. Ironically as I write this recipe for summer cabbage leaf rolls it's pouring outside! But no matter, because a few days ago I was lucky enough to be able to enjoy them on the terrace with the sunset.
This is a very simple recipe that is affordable for everyoneə. It is also perfect for hot days because there will be no need to turn on even a stove. The sweat that usually drips from my forehead will thank you!!! The only time we will need to use boiling water will be to soften our cabbage leaves and asparagus.
In the next few lines I will explain the step-by-step process for :

Where can I find cabbage leaves?
The other day I went to the market and on a lady's stall I saw large bags filled with large green leaves. The lady was loudly shouting "1 Euro, 1 Euro" waving a bag left and right. I stopped to ask her what those green leaves were, but unfortunately she could not answer me. What can I say, I felt challenged: to cook something I don't know the name or the use of.
Arriving home, I began to do some research. I found out that the leaf I was going to cook was named the "Collard greens" in English. In Italian, it is called kale instead. As you might imagine, it is not the cabbage itself, but rather the leaves that grow around it. On this photo you can clearly see what it is all about.
Therefore, to find cabbage leaves I recommend that you go to a local market or aə farmer.
1. How to soften cabbage leaves.
The leaves of cabbage are very hard and tough. For this reason you will need to remove the woody part of the stem by softening them in boiling water. Follow the steps below to prepare your leaves.
Wash your leaves under running water. Remove the woody part of the stem from the protruding part by helping yourself with a sharp knife.
Fill a large bowl with boiling water and a second bowl with ice water and some ice. Dip each leaf into the boiling water for about 15 to 20 seconds or until you notice that the green of the leaf has deepened and the leaf has softened.
Then immediately put the leaf in the ice water for a few seconds.
Place the ready leaves on a kitchen towel and gently pat them dry to remove all the water.
2. How to roll the rolls?
Now that our leaves are ready we can proceed to creating our rolls. Rolling or closing these cabbage leaf rolls is very easy. Once you get the hang of it, you won't even need to follow this tutorial.

Collard greens wraps
Ingredients
- 6 cabbage leaves
- 50 g rice noodles
- 1 large carrot
- 4 asparagus
- 2 spring onions
- 1 red bell pepper
- 1 raw beetroot
- 1 Tbsp peanut butter
- 1 tsp soy sauce
For the sauce
- 2 Tbsp peanut butter
- 1/4 lemon (the juice)
- 2 tsp soy sauce
- 1 Tbsp water
- 2 tsp agave syrup
Instructions
To soften the cabbage leaves
- Wash the leaves carefully.
- Remove the woody part from the leaf as you see in the step above.
- Prepare two large bowls. In the first one put boiling water, in the second one ice-cold water with ice.
- One by one, place the leaves in the boiling water until you notice that the green of the leaf has turned on and the leaf structure has softened. Then immediately put the leaf in the cold water for a few seconds.
- Place the leaves on a kitchen towel and blot the leaf to remove the liquid on both sides.
To prepare the cabbage rolls
- Wash all vegetables and peel carrots and beets.
- Boil water in a kettle or pot. Place the noodles in a bowl and cover them with the boiling water. It will take a few minutes for them to soften.
- Cut the asparagus into 3 parts and cover them with boiling water as well. It will take about 10minutes for them to soften.
- Meanwhile, cut all other vegetables into fine strips.
- Once the noodles are soft, drain them and place them under cold running water so that the cooking is stopped.
- In a bowl mix the peanut butter and soy sauce. This sauce will be for the inside of your rolls.
- Proceed with the composition of your rolls. Help yourself with the photos in the post where I explain the process step by step.
For the sauce
- Put all ingredients in a bowl and mix with a whisk. The sauce is ready.
