Vegan plum tart
Hi foodie friend, welcome back to my blog! I hope you are well and that the end of August didn't come too quickly like it did for me. I mean let's talk about it!!! I feel like this summer has really flown by and now I'm already thinking about all the fall recipes that I definitely need to share with you. For now, though, it's okay to enjoy the last days of summer, and I think this tart from plums Is truly perfect for any occasion.
I picture it beautifully as an after-dinner dessert (served with coconut or vanilla ice cream, of course). Or for brunch or as a snack at snack time! Of course it is, that it will not disappoint on any occasion.
Here are the ingredients you will need for the plum tart
- Vegan shortbread pastry (in my experience, most shortbread pastries in supermarkets are already vegan, but always check to be sure)
- Seed mix (my mix had sunflower seeds, pumpkin seeds, sesame seeds, almonds and cashews, but any mix will do)
- Coconut flakes
- Flaxseed (optional)
- ca. 11 mature plum
- Agave syrup or maple syrup

Plum tart
Ingredients
- 1 shortcrust pastry vegan
- 13 plums fresh and ripe
- 3 Tbsp seeds mix (see description above)
- 1 Tbsp flax seeds
- 2 Tbsp coconut powder
- 1 Tbsp agave syrup
- 1 Tbsp brown sugar
Instructions
- Add the ventilated oven at 180°C (350°F).
- Put the seed mix, coconut powder and flaxseed in a blender and blend it all together. It doesn't have to become a powder. I like to leave it fairly raw.
- Cut each plum into 8 parts and remove the stone.
- Place the shortcrust pastry on a round baking sheet and poke holes in the base with a fork.
- Put the coconut powder and seeds on the pastry base.
- Place the "wedges" on the base starting from the outside.
- Roll up the edges of the pastry.
- Add a drizzle of agave syrup over the plums and sprinkle with a tablespoon of brown sugar.
- Bake the cake for 45min-1hour or until the pastry is golden brown.
- Remove from oven and let stand for 5-10 minutes before serving.
