Vegan plum tart

Hi foodie friend, welcome back to my blog! I hope you are well and that the end of August didn't come too quickly like it did for me. I mean let's talk about it!!! I feel like this summer has really flown by and now I'm already thinking about all the fall recipes that I definitely need to share with you. For now, though, it's okay to enjoy the last days of summer, and I think this tart from plums Is truly perfect for any occasion.

I picture it beautifully as an after-dinner dessert (served with coconut or vanilla ice cream, of course). Or for brunch or as a snack at snack time! Of course it is, that it will not disappoint on any occasion.

Here are the ingredients you will need for the plum tart

  • Vegan shortbread pastry (in my experience, most shortbread pastries in supermarkets are already vegan, but always check to be sure)
  • Seed mix (my mix had sunflower seeds, pumpkin seeds, sesame seeds, almonds and cashews, but any mix will do)
  • Coconut flakes
  • Flaxseed (optional)
  • ca. 11 mature plum
  • Agave syrup or maple syrup

If you can't get enough of sweets

Although I am definitely "team salty," sometimes I also indulge in sweet things. Important to me is that they are quick and easy to make, because I am not particularly gifted when it comes to making desserts. If you are also like me here are some recipes perfect for you:

Servings: 8 slices
Author: LuvveLovesFood
Cost: low

  • 1 shortcrust pastry vegan
  • 13 plums fresh and ripe
  • 3 Tbsp seeds mix (see description above)
  • 1 Tbsp flax seeds
  • 2 Tbsp coconut powder
  • 1 Tbsp agave syrup
  • 1 Tbsp brown sugar

  • Add the ventilated oven at 180°C (350°F).
  • Put the seed mix, coconut powder and flaxseed in a blender and blend it all together. It doesn't have to become a powder. I like to leave it fairly raw.
  • Cut each plum into 8 parts and remove the stone.
  • Place the shortcrust pastry on a round baking sheet and poke holes in the base with a fork.
  • Put the coconut powder and seeds on the pastry base.
  • Place the "wedges" on the base starting from the outside.
  • Roll up the edges of the pastry.
  • Add a drizzle of agave syrup over the plums and sprinkle with a tablespoon of brown sugar.
  • Bake the cake for 45min-1hour or until the pastry is golden brown.
  • Remove from oven and let stand for 5-10 minutes before serving.

This plum tart will be perfect served with vanilla ice cream. A delight!!!
