Strawberry pastries vegan

If you have a sweet tooth like me, then you've come to the right place! You can sweeten your day with this recipe for vegan strawberry pastries. The vegan custard cream to fill these strawberry cakes is very simple to make, while the sugar-free strawberry jam is made with chia seeds which are rich in Omega3. How to make vegan custard

Ingredients:

  • 400 g soya milk I used the one without sugar but also with will do
  • 150 g coconut milk
  • 50 g corn starch (Maizena)
  • 4 tsp sugar
  • 10 drops vanilla - for a tasty vanilla custard
  • 1 pinch turmeric to give the custard its yellow colour

Instructions for the custard

  1. Put all ingredients in a bowl and mix with a whisk making sure there are no lumps.
  2. Turn the heat on medium-low while continuing to stir.
  3. After a few minutes the cream will begin to thicken. Let it thicken until it is almost the perfect consistency.
  4. To speed up the cooling time and prevent lumps from forming, soak the pot in cold water and keep stirring until the cream comes to room temperature.
  5. You can store your custard in the refrigerator for 3-4 days.

How to make strawberry jam without sugar

Ingredients

  • 700 g washed strawberries roughly cut
  • 50 g chia seeds
  • 1 tablespoon agave syrup (optional)

Instructions for making strawberry jam

  • Wash the strawberries and chop them coarsely. If you prefer jam without too many pieces of fruit, you can also blend your strawberries.
  • Put the strawberries in a pot and let them cook over medium-high heat.
  • When you see the strawberries begin to soften, mash them well with the help of a potato masher. let them cook for a few more minutes.
  • Once a smooth, liquid consistency is reached, remove the pot from the heat and add the chia seeds.
  • Let it sit for at least 2-3 hours so that the chia seeds can activate and create the jelly-like effect of the jam we seek.

Ingredients

  • 1 rectangular vegan shortcrust pastry I used the store-bought one
  • 200 g vegan custard cream
  • 50 g sugar-free strawberry jam
  • 6 17.64 oz Strawberries to decorate the pastries

Instructions

  • Turn the oven on to 200°C (400°F).
  • Take your shortbread and cut it into 12 squares of the same size.
  • Place each shortbread square inside a muffin mold, leaving the 4 corners on the sides popping out.
  • Let your shortbread forms bake for about 20 min or until they are nice and golden brown.
  • Let the shortbread forms cool and then garnish them with vegan custard.
  • Then add strawberry jam on top. Cut the strawberries into quarters and then place two quarters on top of each pastry.
