The ingredients you will need to use for this vegetarian (and vegan) radicchio risotto are few and simple.

For the risotto

  • 270 g arborio rice
  • 200 g radicchi
  • 250 ml white wine
  • 1 small white onion
  • 1 clove of garlic
  • 2-3 Tablespoons olive oil
  • 1 L vegetable broth

For the mantecatura

  • 3 tablespoons parmesan veg
  • 1 knob of veg butter
  • 1 Spoonful Noble Yeast

Today I am going to teach you two methods to remove the bitter taste from radicchio. The first method will serve you for recipes in which you use raw radicchio, while the second in hot preparations. This means that for this vegan radicchio risotto you will need to use the second method

  1. Soak the radicchio with vinegar and lemon
    After carefully washing the radicchio, cut it into fine strips. After that, put it in a bowl with some very cold water and a dash of lemon juice and vinegar. Let the radicchio soak for at least 1 hour. Then use it in your salads or other recipes where you will need raw radicchio.
  2. Blanch radicchio in boiling water
    Again, carefully wash the radicchio and cut it into fine strips. Then let the radicchio boil for a few minutes and then drain it. You can then use it as described in the recipe.

How to do the mantecatura in vegan recipes

Let's start with the basics. What is a mantecatura? Simply put, it is a process that is done at the end of cooking a recipe, to give it creaminess and smoothness. It is very common the mantecatura of risotto or even pasta.

Therefore, for good stir-frying of radicchio risotto without cheese, it is necessary to add a cold, fatty element to our preparation. Some examples for vegan cooking may be:

  • Vegetable cream
  • Vegetable butter
  • Olive oil
  • Grated vegan cheese

How do I do the mantecatura for my vegan risottos?

As you'll be able to see in the recipe, I make a habit of putting vegan butter, vegan Parmesan cheese, and a sprinkle of noble yeast to cream my risottos.

Ingredients

  • 270 g arborio rice
  • 200 g red radicchio
  • 250 ml white wine
  • 1 white onion small
  • 1 garlic clove
  • 2 Tbsp Olive oil
  • 1 L vegetable broth

For the mantecatura

  • 3 Tbsp veg parmesan cheese
  • 1 knob vegetable butter
  • 1 Tbsp nutritional yeast

For the veg bacon made with smoked tofu (Optional)

  • 40 g smoked tofu
  • 2 tsp soy sauce
  • 1 tsp liquid smoke
  • 1 tsp garlic powder
  • 1 tsp agave syrup

Instructions

  • Finely chop the onion and peel the garlic.
    1 white onion
  • Wash the radicchio under running water and cut it into strips.
  • Wilt the onion and squeezed garlic in a saucepan with olive oil.
    2 Tablespoons olive oil, 1 clove of garlic
  • Add the rice to the saucepan and let it toast for a few minutes, stirring constantly. The rice is toasted once the grains are more translucent.
    270 g arborio rice
  • Add the radicchio to the casserole while continuing to stir.
    200 g radicchio
  • Add the wine and let it evaporate. Always continuing to stir with a ladle.
    250 ml white wine
  • At this point start adding the broth using a soup ladle . The broth should be added a little at a time and it is important to allow the rice time to absorb it.
    1L vegetable broth
  • Then continue adding 1 ladle of broth and stirring. This process should take 15-20 minutes.
  • When cooked, adjust the salt and pepper. Then proceed with the mantecatura: then add a knob of veg butter, veg parmesan cheese and a tablespoon of noble yeast.
    3 Tablespoons veg parmesan cheese, 1 knob of veg butter, 1 Tablespoon nutritional Yeast

For the vegan bacon (optional)

  • Cut the tofu into very fine cubes.
    40 g smoked tofu
  • Mix all the ingredients for the marinade in a bowl and add the tofu.
    2 teaspoons soy sauce, 1 tsp liquid smoke, garlic powder, 1 tsp agave syrup
  • If you have time let the tofu marinate for a few 15 to 20 minutes, otherwise proceed with pan-frying.
  • Add some seed oil to a hot skillet and sauté the tofu until it becomes crispy or the consistency you prefer.
