Today I am sharing with you a recipe for these quick vegan pancakes. This recipe not only saves you time but is also a great way to use up overripe bananas. In fact you will need 3-4 very ripe bananas for light banana pancakes. Here are all the ingredients you'll need

  • 3-4 very ripe bananas
  • 2 c baking powder
  • 1 c baking soda
  • 8 C abundant flour
  • 6 C oat milk

Pro tip

You may also use less than 3-4 bananas depending on what you have in the house. In case you need to change the proportions of the recipe, try to get a nice even dough and not too thick.

Storage tips

You can store the ready-made batter for your quick vegan pancakes for 2-3 days in an airtight container inside the refrigerator.

Ingredients

  • 3-4 bananas very mature
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 8 Tbsp 0.71 oz chickpea flour abundant
  • 6 Tbsp oat milk

Instructions

  • Mash the bananas with the help of a fork until free of lumps
  • Add the baking powder and baking soda. Then all the other ingredients and mix with a whisk.
  • Heat a nonstick skillet and add a drizzle of sunflower oil to it.
  • Add the dough once the pan is hot forming balls in it
  • Once bubbles have formed on the surface of the Pancakes turn them over with the help of a spatula.
  • Serve with the topping of your choice! I used peanut butter and dark chocolate chip.
