Tofu with baked vegetables (with curry and turmeric)
This baked tofu with vegetables is a quick and easy vegan recipe for when you don't feel like cooking. All you have to do is chop the vegetables coarsely, season the tofu with curry and turmeric powder and put everything in a drip pan. The oven will do the rest! Here are all the ingredients you'll need
- 150 g solid tofu in natural form
- 1 tsp curry powder
- 1 tsp turmeric powder
- 1/2 courgette roughly chopped
- 1/2 sweet potato
- 1 small broccoli
- 2 Tbsp. extra virgin olive oil
- salt and pepper to taste
Preparation (step-by-step)
1. Turn the ventilated oven on to 200°C.
2. Remove the water from the tofu packet and press it for a few seconds with a clean kitchen cloth.
3. Cut the tofu into 1 cm cubes.
4. Put the tofu in a bowl with the spices and mix well.
5. Wash the vegetables and chop them roughly.
6. Put the tofu and vegetables in a baking tray with baking paper.
7. Add salt, pepper and olive oil to the pan and mix well.
8. Bake for 40 minutes at 200°C ventilated function.
9. (optional) Serve with pomegranate and fresh coriander leaves

You can store your tofu with vegetables in an airtight container in the fridge for 3 days.

- ½ zucchini roughly cut
- ½ sweet potato
- 1 small broccoli
- 2 Tbsp extra virgin olive oil
- as needed salt & pepper

- Turn on the ventilated oven at 200°C ventilated operation.
