Sweet and sour pan-fried tofu

With this recipe you can make a tasty sweet and sour pan-fried tofu with vegetables and soy sauce. A perfect vegan dish for a quick dinner. Tofu is one of my favourite ingredients and a mainstay of vegan cooking because it is extremely versatile. Here are all the ingredients you'll need

  • 150 g firm tofu
  • 3 Tbsp. soy sauce
  • 2 Tbsp. water
  • 1 tsp cornstarch
  • 1 tsp sesame seeds
  • 1 tsp agave syrup
  • 1 lemon wedge
  • 1 carrot peeled and cut into rounds
  • ½ courgette cut into strips (see photo)
  • 1 clove of garlic

Preparation (step-by-step)

1. Cut the tofu into 1 cm cubes and the carrots and courgettes as described above.

2. Sauté the garlic, courgette and carrots in a non-stick pan with oil.

3. Remove the vegetables from the pan and set them aside.

4. In the same frying pan, add a little more oil and cook the tofu until it is golden brown on all sides. Then remove it from the frying pan and set it aside with the vegetables.

5. Meanwhile, mix the ingredients for the sweet-and-sour sauce in a bowl or jar.

6. In the same pan, put the soy sauce and cook over a medium/low heat for a few seconds, stirring often.

7. Once the sauce is thick, add the tofu and vegetables.

8. Serve with basmati rice and fresh coriander.

Storage tips

Sweet and sour tofu is best enjoyed hot because as it cools, the sauce hardens and becomes sticky and sticky. However, you can prepare all the ingredients in advance and cook them just before eating your sweet and sour tofu.
