Ingredients

  • 150 g firm tofu
  • 1 tsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp chilli flakes (optional)
  • ½ zucchini roughly cut
  • ½ sweet potato
  • 1 small broccoli
  • 2 Tbsp extra virgin olive oil
  • as needed salt & pepper

Instructions

  • Turn on the ventilated oven at 200°C ventilated operation.
  • Remove the water from the tofu packet and press it for a few seconds with a clean kitchen cloth.
  • Cut the tofu into 1 cm cubes.
  • Put the tofu in a bowl with the spices and mix well.
  • Wash the vegetables and chop them roughly.
  • Put the tofu and vegetables in a baking tray with baking paper.
  • Add salt, pepper and olive oil to the pan and mix well.
  • Bake for 40 minutes at 200°C ventilated.
  • (optional) Serve with pomegranate and fresh coriander leaves
