Guacamole (original recipe)

Today we fly to Mexico! This recipe for amazing guacamole closely follows the original guacamole recipe that I learnt to make in Mexico. It will make you and the people you make it for dream. You can enjoy it during an aperitif or vegan appetiser with some tortilla chips of baked quinoa balls or a creamy chickpea hummus.

  • 1 well-ripened avocado
  • 1 small red onion
  • 5-6 cherry tomatoes
  • 2 tufts of coriander
  • 1.5 tablespoons of extra virgin olive oil
  • 1 clove of garlic
  • 1/2 squeezed lime
  • Salt & pepper to taste

Storage tips

Here are some tips on how best to store your guacamole:

  • If you prepare it in advance: If you prepare your guacamole in advance, you will need to prevent the avocado pulp from oxidising and turning brown at all costs. To do this, once your guacamole is ready, squeeze plenty of lime (or lemon) juice over the surface of the guacamole. This way your guacamole will stay fresh for at least 24 hours.
  • Best enjoyed immediately: Your guacamole will always taste better if you eat it as soon as it is ready. However, if you need to go ahead with your preparations, prepare all the ingredients as described in the recipe except the avocado, which you can add at the end.

Ingredients

  • 1 Avocado ripe
  • 1 red onion small
  • 5-6 cherry tomatoes
  • 2 tuft of cilantro
  • 1.5 Tablespoons of olive oil extra virgin
  • 1 garlic clove
  • 1/2 squeezed lime
  • as needed salt & pepper

Instructions

  • Open the avocado and place it in a large bowl.
  • Mash the avocado with the help of a fork or an upright potato masher.
  • Add the lime juice and mix briefly. This will prevent the avocado from oxidizing and turning brown.
  • Cut the cherry tomatoes into small pieces. Place them in a colander and press them with a fork to remove the water. Then add them to the bowl with the avocado.
  • Cut the onion into small fine cubes and add it to the bowl.
  • Squeeze the garlic with a garlic press and add it to the bowl.
  • Add the olive oil, salt, and pepper to the bowl. Mix in the guacamole.
  • Your guacamole is ready! Enjoy it in a sandwich, with baked tortillas, bread or nachos

In recent decades, a great hype has been built around the avocado. It has now become a fruit that is part of our diet. However, I would like to urge everyone to consume it consciously. It is in fact a fruit whose highly polluting consumption has direct consequences on the environment and the communities that grow it.

It is therefore important to always be aware of these factors when we decide to buy or consume avocados.
