Vegan blinis
Hi foodie friend, welcome back to my kitchen! Today we are going to prepare together another dish to enjoy during appetizers: Vegan Blinis.
What are Blinis?
The original recipe for Blinis comes from Ukraine, Russia and Belarus. It is therefore a typical dish in these countries. On the surface, Blinis look like small "pancakes." In fact they are just as soft and fluffy but are eaten in one bite.
The big difference from pancakes, is that Blinis are savory and are eaten with fillings that are themselves savory. In the following section I will give you some ideas on how to stuff your blinis.
How to stuff vegan blinis
As you already know, I am a great encourager of experimentation in the kitchen! Again, you can give room to your imagination to decide how to stuff and embellish your vegan blinis, there are no limits!
Original blinis are normally stuffed with cream cheese, smoked salmon or/and caviar. Clearly these ingredients are not part of a vegan diet. However, this does not mean that there are not alternatives or alternative versions that are just as tasty!
Here are some ideas for how to stuff your vegan blinis:
- The original veganized version: With some vegan cream cheese and vegan carrot salmon. (You can also let your vegan salmon marinate with beet juice to give it a strong color. see photo)
- The Mediterranean version: With fresh vegan cheese and a paste of Taggiasca olives.
- Mountain version: With some vegan cream cheese and sautéed mushrooms.
- The mouthwatering version: With some vegan cream cheese and caramelized onions.

How to make your vegan blinis look even better
Have you decided on the main ingredients to season your blinis but feel something is missing? The watchword is: GREEN. Add green elements to your blinis.
For example, you could use:
- Some cucumber slices
- Some avocado slices
- Chives
- Cilantro
- Fresh sprouts
I'm sure you now have all the information you need to make your own fluffy vegan blinis. Have fun in the kitchen!
Vegan blinis
Ingredients
- 70 g white flour
- 4 g 0.71 oz chickpea flour
- 13 g 0.46 fl oz peanut oil
- 60 g 13.07 fl oz soy milk unsweetened
- 50 g water
Instructions
- Mix all ingredients in a bowl until smooth and lump-free.
- Heat a frying pan with a drizzle of seed oil.
- Add the dough to the pan, helping yourself with a spoon, trying to form circles with a diameter of 4cm.
- To get a more precise shape I used a sauce tube with a pointed nozzle.
- Let it cook until you see bubbles/holes forming on the surface of your Blinis.
- Turn the blinis with a spatula and let them cook for another minute on the other side.
