Egg-free mayonnaise
Hi foodie friend, welcome back! Today I'm teaching you how to prepare a sauce that can almost never be missing in my fridge (alas!). Yes, as you may have already guessed I'm talking about the egg-free vegan mayonnaise.
Before transitioning to vegan, I was the "queen" of mayonnaise. I made it very often and friendsə and relatives loved it!!! Removing eggs from my diet, however, I had to look for an alternative that was just as satisfying.
Although there are many ways to make mayonnaise without eggs. For example, you can make it with aquafaba (liquid from cooked chickpeas in a can or glass), or with silken tofu. I have tried all these methods and must say. What I am about to introduce to you is definitely my favorite method.
What ingredients you will need for your eggless vegan mayonnaise
You will be surprised how quickly this mayonnaise will be ready. I once made a bet with my boyfriend that I would be able to prepare it in 3 minutes. I timed myself and overrun by maybe only 10 seconds. Of course I have made it several times following this recipe so don't worry if you take longer.
Here are the ingredients you'll need:
- Sugar-free soy milk
- Peanut oil (or seed oil)
- Mustard
- 1/2 squeezed lemon (or white/apple vinegar)
- Salt to taste
Equipement needed:
- immersion blender
- A tall container large enough to hold the immersion blender
A few simple steps for perfect mayonnaise
Put the oil in your container first and then the sugar-free soy milk. It is important to add the ingredients in this order!
Add mustard, 1/2 lemon squeezed, and salt to the mixture
Immerse the immersion blender, operate it, and make gentle up-and-down motions until the desired consistency is achieved. This usually takes about 20 to 30 seconds.
How to use vegan mayonnaise
This mayonnaise is very similar to "classic" mayonnaise. This means that you can really use it as you have always used mayonnaise. The only difference is that this one tastes better because it is homemade!!! So you can use it with burgers and fries, use it to make a dip or in a sandwich.

Eggless vegan mayonnaise
Equipment
- immersion blender
Ingredients
- 100 g 0.46 fl oz peanut oil 100g or 3.38 fl oz peanut oil (or any seeds oil)
- 50 g 13.07 fl oz soy milk unsweetened
- 1 tsp mustard
- 1/4 squeezed lemon (or white/apple vinegar)
- as needed salt & pepper
Instructions
- Put the oil in a cylindrical container (e.g., a 1L measuring cup). It is important that this is the first step.
- Add the milk.
- Add all other ingredients (order is not important)
- Dip the immersion blender into the container. Turn it on only once it is at the bottom of the container.
- Make slow upward and then downward movements while keeping the blender submerged.
- Continue until you get the consistency you want. This should take no longer than 20 seconds.
- Your mayonnaise is ready to be enjoyed!
