Chia apricot jam

Chia seeds, what are they and why eat them?
As you may have guessed, this apricot jam made of Chia seeds thickens precisely because of chia seeds. These are rich in minerals, Omega3 and Vitamin C. They are therefore classified as a true Superfood.
When chia seeds come into contact with a liquid substance they swell, forming almost a viscid, dense hood on their outside. This is why they are used for making puddings or indeed jams!
Here are the steps you will need to perform for apricot jam
The steps you will need to perform are few and simple. It is also a recipe that is forgiving of "mistakes" and has a lot of leeway.
Remove the stone from the apricots. Coarsely chop them and cook on low heat for 20-25 minutes or until soft and fluffy.
Mash them with a potato masher or with a fork
With the heat off, add si chia seeds and mix well with the apricots. Let stand for at least 1 hour or until cool.
Put your jam in a glass jar and store in the refrigerator for up to 3-4 days.
Chia apricot jam
Ingredients
- 650 g 14.7 oz apricots without the kernel
- 2 tsp sugar
- 1 Tbsp Chia seeds
Instructions
- Wash the apricots and remove the stone. Coarsely chop them.
- Put the apricots in a pot with a trickle of water and bring to a boil.
- When the apricots are soft, turn off the heat. Use an upright potato masher or fork to mash even the remaining intact apricot pieces.
- Add the chia seeds and mix them into the apricots with a spoon.
- Let the jam cool and the chia seeds swell for at least 2 hours.
- Your jam is ready. Now you can put it in a jar and consume it within 3-4 days.
