Sweet and sour pan-fried tofu with vegetables

Equipment

  • 1 non-stick frying pan

Ingredients

  • 150 g Firm tofu
  • 3 Tbsp soy sauce
  • 2 Tbsp water
  • 1 tsp corn starch
  • 1 tsp sesame seeds
  • 1 tsp agave syrup
  • 1 clove lemon
  • 1 carrot peeled and cut into rounds
  • ½ zucchini cut into strips (see photo)
  • 1 clove garlic

Instructions

  • Cut the tofu into 1 cm cubes and the carrots and courgettes as described above.
  • Sauté the garlic, courgette and carrots in a non-stick pan with some oil.
  • Cut the vegetables from the pan and set them aside.
  • In the same frying pan, add a little more oil and cook the tofu until it is golden brown on all sides. Then remove it from the pan and set it aside with the vegetables.
  • Meanwhile, mix the ingredients for the sweet-and-sour sauce in a bowl or jar.
  • In the same pan, put the soy sauce and let it cook on low heat for a few seconds, stirring often.
  • Once the sauce is thick, add the tofu and vegetables and enjoy with basmati rice.
