Vegan bear garlic butter

Recipe for a wild garlic flavored butter with fresh wild garlic, vegan butter and salt.

Equipment

  • 1 blender
  • 1 baking paper

Ingredients

  • 2 handfuls wild garlic
  • 250 g vegan butter
  • 1/2 tsp coarse salt
  • 1/2 tsp fine salt

Instructions

  • Wash the wild garlic under running water and be sure to remove any insects and/or soil. You will be able to use the salad washer for this step.
  • Cut your bear garlic into coarse strips.
  • Place all ingredients inside the blender and blend for a few minutes until airy, smooth and slightly green.
  • At this point enjoy the butter as you like or put it to rest in the refrigerator

How to roll flavored butter for refrigerated storage

  • Take an approx. 30x20cm piece of baking paper and place the butter on the longest side that is closest to you when you are facing the rectangle of baking paper.
  • Roll the baking paper around the butter and try to give it a sausage shape. Now take the sides and twirl the two ends in opposite directions to give the sausage a more regular shape.
  • Then let the butter sit in the refrigerator for at least 2 hours and enjoy it on croutons, in pasta or on bread.
