Baked carrots (with vegan parmesan cheese)
Today I'm showing you a quick and easy recipe for baked carrots au gratin on a bed of crispy vegan Parmesan cheese that you can use as a tasty and delicious side dish. You'll need just a few simple ingredients and a few easy steps to get a great result and side dish. - 10 medium-sized carrots
- 3 generous handfuls of vegan Parmesan cheese
- q.b extra virgin olive oil
- Salt & pepper to taste
How to prepare baked carrots (step-by-step)
- Turn the hot-air oven on to 220°C.
- Peel the carrots and cut them into rounds to make 4 equal lengths.
- Grate the vegan parmesan cheese and place it on the baking sheet with baking paper.
- Arrange the cut carrots on top of the parmesan. If desired, also add fresh rosemary to your baked carrots.
- Sprinkle with oil, salt and pepper. Help yourself with a brush. For this step you can also put the carrots with the spices and extra virgin olive oil and mix well.
- Bake for 30 minutes at 220°C

Ingredients
- 10 medium-sized carrots
- 3 handfuls vegetable parmesan cheese
- as needed Olive oil
- as needed salt & pepper
Instructions
- Peel the carrots and cut them into equal parts.
- grate the vegan Parmesan cheese and place it on the baking tray with baking paper.
- Arrange the carrot pieces on the parmesan.
- Season with oil, salt and pepper.
- Bake for 30 min at 220°C.
