Baked carrots (with vegan parmesan cheese)

Today I'm showing you a quick and easy recipe for baked carrots au gratin on a bed of crispy vegan Parmesan cheese that you can use as a tasty and delicious side dish. You'll need just a few simple ingredients and a few easy steps to get a great result and side dish. Here are all the ingredients you'll need

  • 10 medium-sized carrots
  • 3 generous handfuls of vegan Parmesan cheese
  • q.b extra virgin olive oil
  • Salt & pepper to taste

How to prepare baked carrots (step-by-step)

  1. Turn the hot-air oven on to 220°C.
  2. Peel the carrots and cut them into rounds to make 4 equal lengths.
  3. Grate the vegan parmesan cheese and place it on the baking sheet with baking paper.
  4. Arrange the cut carrots on top of the parmesan. If desired, also add fresh rosemary to your baked carrots.
  5. Sprinkle with oil, salt and pepper. Help yourself with a brush. For this step you can also put the carrots with the spices and extra virgin olive oil and mix well.
  6. Bake for 30 minutes at 220°C
