Ingredients
For the cake toppings
7-8plums
1handfulraspberries(optional)
1handfulfrozen currants(optional)
1/3tspnutmeg powder
1/2Tbspcinnamon powder
1handfulAlmond granules
For the cake dough
180gall purpose flour
300mlplant milkI used the one from Wunderkern
1.5tspBaking powder
50gbrown sugar
For the brown butter
100gvegan butter
Instructions
Cut the plums in half and then into wedges after removing the stone.
Put all the fruit in a bowl and add the cinnamon and nutmeg. Squeeze the fruit with your hands lightly to give a little less "texture" to your fruit and to spread the cinnamon well
For the cake dough
Mix all the ingredients for the cake batter until it is free of lumps.
To brown the butter
Melt the butter in a frying pan over medium temperature, stirring constantly. Do this for at least 5 to 10 minutes, letting the butter also bubble
To compose the cake
Pour the butter into the baking dish (26x20cm) with high sides where you will make your cake.
With the help of a spoon, pour the dough inside the pan with butter.
Then add your fruit already sprinkled with cinnamon on top.
Finish with a sprinkling of almond granules.
Bake at 200°C for 40-50min or until your cake is nice and golden brown
