Vegan salmon carpaccio (calmon)
Hi amicə. Welcome backə to my blog! Christmas is approaching and today I offer you a recipe perfect for holiday appetizers. It is a vegan salmon and avocado carpaccio. Needless to say, there will be no salmon fish in our recipe, but an alternative made with carrots (which I call Calmon lol).
A few months ago I had shared with you my recipe for the Calmon (vegan salmon), and that is where our recipe for smoked salmon carpaccio with avocado starts.
How to make vegan salmon carpaccio (calmon)
There is nothing simpler than the preparation of this carpaccio! Follow the recipe for my vegan salmon (calmon) found at this link. Be sure to marinate it for a few hours, even better if you prepare it the day before. Once your calzone is ready, simply cut the avocado into slices and then proceed with the plating.
How to best plate your carpaccio
Fish carpaccio is a great classic during holiday lunches and dinners. If you already know that you will be in the situation of having to refuse fish during Christmas lunch, or if you simply want to try something new and more sustainable this is the recipe for you.
As with everything, the eye wants its share in food. To make an assured impression, go all out on the plating. Make sure you have garnishes for your carpaccio, aim for color contrasts. For example, I used radicchio sprouts, finely chopped red onion, cappelletti and chives. I encourage you to use your creativity and imagination, there are no rules in cooking!
When you compose the dish move in a circular direction by alternating a slice of calzone and a slice of avocado until you finish the circle, then do the same for the center.

Salmon carpaccio ("calmon")
Ingredients
- 400 g 14.11 oz carrot lox (calmon)
- 1 ripe avocado
For decoration
- 1/2 red onion finely chopped
- 1 tuft chives
- 1 Tbsp pickled capers
- 1 Tbsp radish sprouts
- as needed sesame oil
- as needed salt & pepper
Instructions
- Make carrot salmon. You can find the recipe on my blog by searching for "smoked vegan salmon."
- Cut the avocado into wedges.
- On a plate place a slice of avocado, then one slice of vegan salmon, then one slice of avocado again and continue like this starting from the outside going in a circle.
- Decorate your carpaccio with finely chopped onion, capers, sprouts and chives
- Add a drizzle of sesame oil to finish your carpaccio.
