Cut the avocado into wedges.
On a plate place a slice of avocado, then one slice of vegan salmon, then one slice of avocado again and continue like this starting from the outside going in a circle.
Decorate your carpaccio with finely chopped onion, capers, sprouts and chives
Add a drizzle of sesame oil to finish your carpaccio.
