Peel the carrot and grate it with a grater.

Wash the zucchini and grate it as well.

Squeeze the carrots and zucchini over a sink with your hands to remove some of the liquid they contain. You can also help yourself with a kitchen cloth that you are willing to dirty : the carrots are likely to leave color and it will be difficult to remove.
Add all the ingredients in a bowl and mix by helping yourself with a spoon or ladle until you get a smooth batter.
canned corn, fresh spinach, baking powder, all purpose flour, 2 teaspoons d'olive oil, water, salt and pepper to taste, q.b spices of your choice
Turn on your waffle maker and make sure it is lightly greased with some vegetable oil, vegan butter, or other.
Add the batter to the griddle and cook for 5 to 7 minutes or until the waffle is golden brown on both sides.
