Vegan potato salad

Here are all the ingredients you'll need
- 5 medium-sized potatoes
- 4 Tbsp vegan mayonnaise
- 150 ml cold vegetable broth
- 3 tsp mustard
- Chives to taste
- Salt and pepper to taste
Preparation (step-by-step)
1. Cook the potatoes
Boil the potatoes with their skins on for 15-20 minutes, taking care not to overcook them. They should remain quite firm, so check the consistency frequently.
2. Peel the potatoes
Let the potatoes cool a little to avoid burning your hands and then peel them. If you are in a hurry, run them under cold water as soon as they are cooked.
3. Prepare the mayonnaise sauce
Let the potatoes cool and in the meantime prepare the sauce. In a bowl, mix the vegan mayonnaise, vegetable stock, mustard, chopped chives, salt and pepper.
3. Assemble the potato salad
Cut the potatoes into cubes and add them to the sauce, stirring well to flavour. If the consistency is too thick, you can add a little water to make it more fluid.
4. Serve and garnish
Serve the vegan potato salad garnished with fresh chives.
Storage tips
This vegan potato salad can be stored in the refrigerator for up to 2-3 days, covered with cling film or closed in an airtight container. However, it is advisable to consume it as soon as possible to best appreciate its flavour and texture.

Ingredients

- 150 ml broth (veggie stock)
- 3 tsp mustard
- as needed chives
- as needed salt & pepper
Instructions
- Boil the potatoes with their skins on for 15-20 minutes. The potatoes should remain quite firm. So check their consistency frequently.
- Let the potatoes cool a little and then peel them.
- Prepare the sauce by mixing the mayonnaise, broth, mustard, chives, salt and pepper. Keep some chives on the side for decoration at the end.
- Cut the potatoes into small pieces and add them to the sauce.
- Mix the salad well and add mayonnaise or water if you think it is necessary!
