medium-size potatoes

vegan mayonnaise

broth (veggie stock)

mustard

chives

Instructions
Boil the potatoes with their skins on for 15-20 minutes. The potatoes should remain quite firm. So check their consistency frequently.
Let the potatoes cool a little and then peel them.
Prepare the sauce by mixing the mayonnaise, broth, mustard, chives, salt and pepper. Keep some chives on the side for decoration at the end.
Cut the potatoes into small pieces and add them to the sauce.
Mix the salad well and add mayonnaise or water if you think it is necessary!
