Vegan potato salad

Simple recipe for a potato salad with homemade vegan mayonnaise (ready in 2 minutes)

Ingredients

  • 5 medium-size potatoes
  • 4 Tbsp vegan mayonnaise
  • 150 ml broth (veggie stock)
  • 3 tsp mustard
  • as needed chives
  • as needed salt & pepper

Instructions

  • Boil the potatoes with their skins on for 15-20 minutes. The potatoes should remain quite firm. So check their consistency frequently.
  • Let the potatoes cool a little and then peel them.
  • Prepare the sauce by mixing the mayonnaise, broth, mustard, chives, salt and pepper. Keep some chives on the side for decoration at the end.
  • Cut the potatoes into small pieces and add them to the sauce.
  • Mix the salad well and add mayonnaise or water if you think it is necessary!
