Vegan pasta carbonara

If you followed me on social during the month you will have noticedə that I was in Rome and ate a carbonara 3 days on and 2 days off! Because let's face it, what do you do, go to Rome and not eat at least 4 vegan carbonaras? That's why today I'm showing you my recipe for a creamy vegan carbonara pasta And just as delicious as the original. Try it to believe! Ingredients for a creamy vegan carbonara

If I offer you this recipe that often stirs up so much (unnecessary) controversy, it is because I have had my numerous failures to find the recipe for a perfect vegan carbonara! I had almost thrown in the towel until I visited the restaurant Oregano Campo de' Fiori Rome. This restaurant is located in the center and has a wide selection of vegan options and traditional dishes revisited in a vegan key. If you are passing through Rome, you absolutely must visit it! I immediately fell in love with their carbonara and managed to "steal" some tips from the chef.

Here are all the ingredients for pasta carbonara:

  • 200 ml Vegetable cooking cream (sugar-free)
  • 250 g Spaghetti
  • 150 g vegan bacon
  • 1-2 Tablespoon Kala Namak: also called Himalayan black salt, will give an eggy taste and smell to your cream due to its strong odor.
  • 1 Knife tip turmeric powder: To make the cream more yellow. Don't overdo the turmeric or your pasta will turn phosphorescent while cooking!
  • 2 Tablespoons Noble Yeast in flakes
  • 2 Tablespoons Vegetable Parmesan cheese (optional)
  • 1 Cup Pasta cooking water
  • q.b seed oil

How to substitute bacon in vegetable carbonara

To replace the animal bacon you can try to prepare Homemade vegan bacon !! You will be able to access the recipe by clicking on the blue print above or on the images below. The recipe is very simple and requires only a little patience for baking time (35 minutes total) and cooling time.

If you have the time and opportunity to make your own vegan bacon I recommend making it, it's worth it!

Vegan creamy carbonara

Ingredients

  • 200 ml Vegetable cooking cream (sugar-free)
  • 250 g Spaghetti
  • 150 g Vegan bacon
  • 1-2 tsp Kala Namak (Himalayan black salt)
  • 1 tip of a knife turmeric powder
  • 2 Tbsp nutritional yeast in flakes
  • 2 Tbsp Vegetable parmesan cheese -facultative-
  • 1 cup Pasta cooking water
  • as needed seeds oil

Instructions

  • Put water on the stove in a pot.
  • Meanwhile, brown the bacon in a skillet with plenty of seed oil and then set aside. See my "vegan bacon" recipe for more details!
  • In a bowl put the cream, kala namak, noble yeast, turmeric powder (a knife tip!),
  • Salt the water for the pasta and throw the pasta into the water that has reached a boil in the meantime. The pasta should cook for only 2-3 minutes.
  • Put the mixture with the cream in a large frying pan and turn the flame on medium heat.
  • Keep a cup of the pasta cooking water before you drain the pasta. Then put the pasta while still al dente in the pan with the cream and increase the heat.
  • Add the cooking water to the pan gradually with the pasta and cream and allow the pasta to "risotto", stirring occasionally and adding water as needed.
  • When the pasta is cooked and the cream is nice and thick, add the vegetable parmesan (and water if needed)
  • Add 3/4 of the veg bacon and plate the pasta. Place the remaining bacon on top of the pasta.
