Vegan amatriciana with homemade bacon

Hi foodie friend! As you may have seen, even with today's recipe we are staying in the Rome area. And honestly, I'm not complaining! This vegan amatriciana with homemade bacon is a dream and I can only recommend you to try it too.

  • 250g or 8.82 oz pasta. I used penne rigate for my amatriciana.
  • 150 g or 5.29 oz tomato sauce
  • 150g or 5.29 oz vegan homemade bacon
  • 1 medium-sized onion
  • 1 clove of garlic
  • 1 Tbsp tomato paste
  • 3 Tbsp olive oil
  • 1 handful of vegetable parmesan cheese
  • Basil
  • Salt and pepper to taste

If you don't have time to make your own veg bacon, you can replace it with smoked tofu, seitan, or a veggie bacon alternative found at the supermarket.

Ingredients

  • 250 g 8.82 oz penne rigate any pasta is fine
  • 150 g 5.29 oz tomato sauce
  • 150 g vegan homemade bacon
  • 1 medium-sized onion
  • 1 clove garlic
  • 1 Tbsp tomato paste
  • 3 Tbsp Olive oil
  • 1 handful vegetable parmesan
  • basil
  • as needed salt & pepper

Instructions

  • Put the water for the pasta in a pot and turn on the flame. Cover with a lid to make the water boil faster.
  • Peel and dice the onion. Also peel the garlic and crush it with a knife.
  • Heat the olive oil in a frying pan and add the onion and garlic.
  • When the onion is translucent, add the tomato paste.
  • Add tomato puree, salt and pepper and turn down on a low flame with a lid.
  • Meanwhile, toss the pasta and cook the vegan bacon in a separate pan with plenty of seed oil (more details in the post linked above)
  • Let the sauce cook gently for at least 10 minutes.
  • Once the pasta is cooked, drain it and add it to the tomato sauce still in the pan.
  • Also add the basil and 3/4 of the veg bacon to the pan with the pasta and mix well.
  • Serve the pasta on plates and place the remaining veg bacon on top of each serving.
    For a fresh touch, put in a few basil leaves as well.
