Vegan amatriciana pasta
Alternative recipe for a vegan amatriciana with homemade bacon

medium-sized onion

Olive oil

vegetable parmesan

Instructions
Put the water for the pasta in a pot and turn on the flame. Cover with a lid to make the water boil faster.
Peel and dice the onion. Also peel the garlic and crush it with a knife.
Heat the olive oil in a frying pan and add the onion and garlic.
When the onion is translucent, add the tomato paste.
Add tomato puree, salt and pepper and turn down on a low flame with a lid.
Meanwhile, toss the pasta and cook the vegan bacon in a separate pan with plenty of seed oil (more details in the post linked above)
Let the sauce cook gently for at least 10 minutes.
Once the pasta is cooked, drain it and add it to the tomato sauce still in the pan.
Also add the basil and 3/4 of the veg bacon to the pan with the pasta and mix well.
Serve the pasta on plates and place the remaining veg bacon on top of each serving.
For a fresh touch, put in a few basil leaves as well.
