Pumpkin stuffed with cheese fondue (vegan)
Today I present a recipe for a baked pumpkin stuffed with cheese fondue. But not stuffed with vegetables, but with vegan fondue. The Swiss brand New Roots makes vegan cheese and I am really in love with their vegan cashew fondue. For this recipe, therefore, the cheese is already tasty and will not require seasonings such as nutritional yeast. We will just bake the whole pumpkin in the oven and then fill it with cheese. Here are all the ingredients you'll need
- LaFondue vegan from New Roots
- 1 full pumpkin
- 1 clove of garlic
- Bread and gherkins to dip
Preparing pumpkin stuffed with fondue (step-by-step)
1. Cut the head of the pumpkin and remove the seeds and filaments.
2. Sprinkle the inside of the pumpkin with olive oil and pepper.
3. Place the pumpkin in the oven at 250° for 45-50 minutes.
4. Cut the bread into cubes and prepare your gherkins
5. Meanwhile prepare LaFondue by rubbing a clove of garlic on a frying pan. Then add LaFondue to the pan and turn on the heat.
6. Melt LaFondue until it reaches the desired consistency.
7. Remove the pumpkin from the oven with gloves on and gently place it on a plate. Ideally on a deep dish so that it does not sag too much.
8. Pour LaFondue into the pumpkin and enjoy.
9. Optional: If desired, brown some sage leaves in a frying pan with olive oil and pour them over the fondue to give it some aroma

Pro tip
If you wish, fry some fresh sage leaves in a little olive oil and pour them over LaFondue for maximum comfort.
Storage tips
Once heated, LaFondue cannot be reused. You can, however, remove the pumpkin flesh filled with cheese fondue from inside and use it to make soup, pumpkin gnocchi or a vegan mac and cheese.

- 3 Tbsp extra virgin olive oil
