Tofu Cacciatore

Ingredients

  • 350 g firm tofu
  • 300 ml cherry tomato puree (or normal puree)
  • ½ diced white onion
  • 1 clove pressed garlic
  • 1 handful olives (Kalamata or Taggiasche)
  • as needed extra virgin olive oil
  • as needed salt & pepper

Instructions

  • Cut the tofu into 0.5 cm thick slices.
  • With a clean kitchen cloth or kitchen paper, try to remove the water from the tofu by gently pressing on each slice.
  • Heat some extra virgin oil in a frying pan and put the tofu in it.
  • Brown for 5 minutes until nicely toasted and then turn each slice of tofu over and cook the other side. Add salt and pepper.
  • Once cooked, remove all the tofu slices from the pan and place them on a plate.
  • In the same pan, now add the diced onions and fry them until they become transparent.
  • Then add the cherry tomato puree and olives and leave to brown for about ten minutes.
  • Then return the tofu to the pan with the sauce, stir well, add salt if necessary and serve!
