Ingredients
350
g
firm tofu
300
ml
cherry tomato puree
(or normal puree)
½
diced white onion
1
clove
pressed garlic
1
handful
olives
(Kalamata or Taggiasche)
as needed
extra virgin olive oil
as needed
salt & pepper
Instructions
Cut the tofu into 0.5 cm thick slices.
With a clean kitchen cloth or kitchen paper, try to remove the water from the tofu by gently pressing on each slice.
Heat some extra virgin oil in a frying pan and put the tofu in it.
Brown for 5 minutes until nicely toasted and then turn each slice of tofu over and cook the other side. Add salt and pepper.
Once cooked, remove all the tofu slices from the pan and place them on a plate.
In the same pan, now add the diced onions and fry them until they become transparent.
Then add the cherry tomato puree and olives and leave to brown for about ten minutes.
Then return the tofu to the pan with the sauce, stir well, add salt if necessary and serve!
Bon appetit!
