Smoked Tofu with Zucchini and Tomato | with basmati rice

Equipment

  • 1 non-stick frying pan

Ingredients

  • 300 g smoked tofu
  • 1 zucchini
  • 1 handful cherry tomatoes
  • 1 red onion
  • 1 pinch paprika powder
  • 1 clove garlic
  • 1 Tbsp extra virgin olive oil

Instructions

  • Remove the water from the tofu packet and cut it into cubes of approx. 1 cm.
  • Brown the tofu over medium-high heat in a non-stick frying pan with a little olive oil.
  • Add salt and pepper to the tofu. Turn it occasionally to make sure all sides of the tofu are nicely browned.
  • in the meantime, wash and cut the vegetables as you like. Even coarsely chopping them will produce a good result.
  • Once the tofu is nicely browned, set it aside in a bowl.
  • Now put another drizzle of oil in the same frying pan and pour in the chopped courgette, cherry tomatoes and onion.
  • Sauté the vegetables with paprika powder for a few minutes until they are slightly wilted.
  • Then add the tofu to the pan and stir briefly.
  • Your smoked tofu is ready to be enjoyed with plain rice and soy sauce.
