Mini vegan snickers

Ingredients

For the cookie inside

  • 80 g 2.82 oz vegan chocolate cookies
  • 80 g oat flakes
  • 2 Tbsp coconut oil
  • 1 Tbsp Maple syrup

For the cream inside

  • 160 g dates left to soak in water for at least 1h (or overnight)
  • 5 Tbsp Manko almond and coconut cream (by Uncooked) Or a cream of almonds, peanuts or cashews
  • 3/4 tsp salt
  • 4 handfuls roasted and salted cashews
  • 35 g 1.23 oz walnuts

For the chocolate coating

  • 200 g dark chocolate
  • 1 tsp coconut oil

Instructions

For the inner cookie

  • Add all ingredients to a blender and blend briefly until you have a mass that can be compacted with your hands. If it does not compact enough add 2-3 dates.

  • Cover the inside of a rectangular or square container (tupperware) with cellophane.
  • Place the cookie mass on the bottom and flatten it evenly, helping yourself with a marisa. Let rest in the freezer while you work on the cream.

For the creamy interior

  • Blend dates, salt and almond and coconut cream

  • Add the roasted and sautéed cashews to your cream
    4 handfuls roasted and salted cashews
  • Put the cream in the container where you put the cookie base and again help yourself with the marisa to flatten it out.
  • Place the container in the freezer for 3-4 hours or until the mixture has solidified completely.

For the chocolate coating

  • Place your chocolate in a container in a bain-marie with boiling water. To make the chocolate melt better, add a teaspoon of coconut oil.

  • Wait until the chocolate comes to room temperature before coating your snickers.
  • Remove the rectangular mass from the freezer and cut into cubes of about 2x2cm or the size you prefer.
  • Put a toothpick in the cubes and dip them in chocolate. Place them on a plate with baking paper. Let stand in the refrigerator and remove the toothpick once the chocolate has solidified.
  • Optional step: If you want to decorate your snickers, you can dip a spoon into the chocolate, let it drip briefly and then make back and forth motions over each individual snickers.
