- 250 g cooked chickpeas
- 2-3 clumps of formentino (or any salad such as arugula)
- 1/4 cucumber
- 1 handful cherry tomatoes
- 1/2 bell pepper
- 1 small red onion
- 1 tuft of parsley
For the sauce
- 2 Tbsp almond yogurt (or any other sugar-free vegetable yogurt)
- 1 Tbsp Olive oil
- 1 Tbsp balsamic vinegar
- 1 tsp mustard
- as needed salt & pepper
Drain and wash the chickpeas under running water.
Wash the vegetables and cut them as you like but trying to keep them the same size.
Wash the salad and dry it well
Prepare the sauce by putting all the ingredients for the sauce in a bowl and mix well.
Assemble the chickpeas, vegetables, salad, and sauce in a bowl and mix well.
