Ingredients

  • 250 g cooked chickpeas
  • 2-3 clumps of formentino (or any salad such as arugula)
  • 1/4 cucumber
  • 1 handful cherry tomatoes
  • 1/2 bell pepper
  • 1 small red onion
  • 1 tuft of parsley

For the sauce

  • 2 Tbsp almond yogurt (or any other sugar-free vegetable yogurt)
  • 1 Tbsp Olive oil
  • 1 Tbsp balsamic vinegar
  • 1 tsp mustard
  • as needed salt & pepper

Instructions

  • Drain and wash the chickpeas under running water.
  • Wash the vegetables and cut them as you like but trying to keep them the same size.
  • Wash the salad and dry it well
  • Prepare the sauce by putting all the ingredients for the sauce in a bowl and mix well.
  • Assemble the chickpeas, vegetables, salad, and sauce in a bowl and mix well.
