Ingredients

  • 800 g Coral Tooth mushroom

For the beer batter

  • 300 g all purpose flour
  • 100 ml sparkling water
  • 200 ml beer
  • as needed paprika powder
  • as needed garlic powder
  • as needed salt & pepper

For the yogurt sauce

  • 6 Tbsp vegan yogurt
  • 3 Tbsp tahin sauce
  • 1 clove garlic (optional)
  • 1/4 lemon juice
  • as needed salt & pepper

Instructions

To prepare the batter

  • To make the batter, whisk together the flour, paprika, garlic powder, salt, and pepper.
  • Slowly add the sparkling water and beer until you achieve a runny, yet dense consistency. If it's too stiff, add more sparkling water; if it's too runny, add more flour.

To prepare the yogurt sauce

  • Take your freshly foraged coral tooth mushrooms and dip them into the batter, ensuring they're well coated

For Frying

  • Take freshly picked coral tooth mushrooms and dip them in the batter, making sure they are well coated.
  • Carefully lower them into hot oil and deep fry until they turn golden brown and crispy.
