Heat a non-stick frying pan with extra virgin olive oil and brown the tofu slice on both sides.
If your frying pan is large enough, put the rustic bread roll cut in half in the pan as well. Otherwise toast the bread in a separate pan.
Add salt and pepper to your tofu.
In the meantime, wash the vegetables and cut 5 slices of cucumber, peel the carrot and make even strips.
Once the tofu is golden brown on both sides put the cheese slice on top, add a few drops of water to the pan, turn down the heat and put the lid on. This will melt the cheese more evenly.
Then make up your burger by first placing the fresh spinach, cucumber, tofu with cheese, pickled red onions, carrots and mayonnaise.
