Vegan (or vegetarian) meatballs are one of my favorite preparations because they can be prepared in a thousand ways and according to each person's taste. For example, I also really like these <a href=\"https:\/\/luvvelovesfood.com\/en\/italian-style-lentil-meatballs\/\">lentil meatballs with sauce<\/a>, or these <a href=\"https:\/\/luvvelovesfood.com\/en\/chickpea-carrot-meatballs\/\">vegan chickpea and carrot meatballs<\/a> or these <a href=\"https:\/\/luvvelovesfood.com\/en\/tofu-meatballs-2\/\">tofu and chickpea meatballs<\/a>. <\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\">Why you'll love these stewed eggplant meatballs.<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Simples:<\/strong>\u00a0these baked eggplant meatballs with marinara sauce are simple to make and require only a few easy steps that I explain below (with photos)<\/li>\n\n\n\n<li><strong>No eggs:<\/strong>\u00a0These meatballs are vegan and therefore contain no eggs or other cheeses such as cottage cheese.<\/li>\n\n\n\n<li><strong>Prepare them first:<\/strong>&nbsp;you can prepare the eggplant meatballs in advance and cook them only once you need them. The meatballs stay good for up to 2 days if stored in an airtight container inside the refrigerator.<\/li>\n\n\n\n<li><strong>Also gluten-free:<\/strong>&nbsp;these italian-style eggplant meatballs can also be made gluten-free.
